& Situation:
History of food microbiology,
Sterilization, Pasteurization, Fermentation occurrence, morphology and economic
importance of different micro organisms. Control of micro organisms in food by
different methods. Bacteriological analysis of milk, Water and air. Food borne
infections, Sanitation and hygiene in foods, Food spoilage and safety.
Unit – II Nutritional
Management in Health and Disease.
Health and Nutrition, Energy
requirement, Meal planning, Diet planning throughout life cycle. Diet therapy, Modification
of diet for therapeutic purposes. Nutritional management in common ailments.
Parenteral nutrition.
Community Nutrition:-
Concept, scope, nutritional
status assessment and surveillance. Direct nutritional assessment of human
groups. Diet surveys- Need, importance and methods. Secondary sources of
community health data. Nutritional problems of the community. Schemes and
programmes to combat them. Hazards in community health surveillance – system,
